Pomegranate Salad

We love this pomegranate salad recipe from Mika Street, owner of Uptown Pilates.  It's oh so simple to prepare, light and healthy, and the vibrant pomegranate seeds give it a great festive feel that will help decorate any dining room table.  And pomegranate seeds are not only low calorie and high in fiber, but they are also a great source of vitamins, including Vitamin C and Vitamin K.  Bon appétit!

Dressing Ingredients

3/4 cup olive oil
2 garlic cloves
1 tbls honey
1 tsp sugar
1 tsp soy sauce
1 tbls pomegranate vinegar

Salad Ingredients

Arugula
Roasted soy beans
Fresh pomegranate seeds

Preparation

Combine dressing ingredients in a food processor.  Mix dressing over arugula with roasted soy beans and fresh pomegranate seeds. Serve and enjoy!
