Featured Recipe: Marinated Feta & Olives Appetizer from Michelle Eichas

Brought to us by Michelle Eichas, Dietitian and Health Coach at Exceed Fitness, this marinated feta and olives appetizer is a great low-calorie, easy-to-make hors d'oeuvre to serve your guests or bring to a cocktail party...and can even be made in advance!

Marinated Feta and OlivesIngredients

1 cup sliced pitted olives, such as Kalamata or mixed Greek
1/2 cup diced feta cheese, preferably reduced-fat
2 tablespoons extra-virgin olive oil
Zest and juice of 1 lemon
2 cloves garlic, sliced
1 teaspoon chopped fresh rosemary
Pinch of crushed red pepper
Freshly ground pepper to taste

Preparation

  1. Combine olives, feta, oil, lemon zest and juice, garlic, rosemary, crushed red pepper and black pepper in a medium bowl.

  2. Serve on whole wheat Crackers of choice, crostinis or any other way that you’d like!!

* Make Ahead Tip: Cover and refrigerate for up to 1 day.

Michelle Eichas is both a personal trainer as well as a dietitian and health coach at Exceed Fitness.  Combining these two passions allows her to transform lives through both diet and exercise.  She has counseled numerous clients and helped them through their personal lifestyle barriers whether that means reaching the goal of a healthy weight or improving specific sport performances.

Growing up in Rochester, NY alongside her brother James, she developed a love for sports, fitness, health and an overall interest in how the body functions.  After injuries kept her from competing at the collegiate level, she dedicated her studies to helping others achieve their personal ambitions, completing a Bachelor of Science in Kinesiology with a concentration in Fitness Development, a second Bachelor of Science and Masters in Dietetics, and is currently pursuing additional certifications to expand her expertise. Having the ability to pursue both of her interests simultaneously has served to be a perfect fit in feeding the enthusiasm she encompasses in helping others achieve their goals.
