Featured Recipe: Tomato Salad

Cancer claimed a dear friend of mine last year. She was a tremendous person and also an outstanding cook. I'm truly grateful to have had the years we did together. This year at Thanksgiving we will remember and honor her by sharing one of her beloved recipes.

Thanksgiving can be overly filling. Instead of that bogged down feeling, brighten up your spread with some colorful vegetable salads and side dishes. This simple yet flavorful tomato salad is cleansing and addicting. Over deliver on this serving size which will only satisfy 3 - 4 guests. You will definitely go back to the fridge for more when everyone is gone - if they leave you any leftovers, that is.

Ingredients
2 containers of cherry tomatoes
2 teaspoons of cumin
6 green onions
Salt to taste
1 lime squeezed
1 bunch of cilantro chopped
Tobacco sauce 1/4 teaspoon
1 small jalapeño minced

Instructions
Mix all ingredients in a bowl, serve and enjoy!
